This is the coolest root veggie I have ever tried- salsify! Man called us the oyster plant. Salsify is really hard to find and so delicious! What makes unique is that it has a flavor similar to oysters with the texture of a potato! It’s really hard to describe, but the flavor is bony and slightly fishy, but in a very pleasant and delicious way!
